Their signature Crispy Original Xiao Long Bao ($6.18) is my personal must-have. Think of it as the O.G xiao long bao, taken up ten notches. The bao is delicately pan-fried at the base, adding a chewy crunch to the burst of flavour that is guaranteed with this savoury soup-filled dish.

2. Keng Eng Kee

Known for delicious zi-char that has won the hearts of British Celebrity Chef James Martin and the late Anthony Bourdain, Keng Eng Kee Seafood needs no introduction. Starting out as a small hainanese chicken rice store, they’re now an established powerhouse in the local zi-char scene, bagging notable awards from the likes of Makansutra to Singapore Brands and Singapore Entrepreneur.

The Chilli Crab (from $86.40) is one of the stars of the menu, with an eggy sauce that’s sweet yet savoury, slightly spicy and extremely shiok. If you prefer Black Pepper Crab (from $86.40), be sure to try it out at Keng Eng Kee as the intense peppery heat will hit you with an umami kick that you won’t forget easily.

The Wok-toss Moonlight Horfun (from $7.20) tastes as good as it looks. Living up to its name, you get a pleasantly charred flavour from the Wok Hei of the dish. 3. Yun Nans

If you’ve got a thing for YunNan cuisine, you’d be no stranger to Yun Nans, the first overseas venture of “Yun Hai Yao” (云南肴), the largest restaurant chain in China specialising in YunNan ethnic highland cuisine.

The star of the menu is undoubtedly the Steamed Chicken Soup ($9.09), made WITHOUT water. (Yes, you read that right!) The chicken is pressure-steamed with seemingly simple ingredients such as salt and pepper, and the condensation formed from the steam is what eventually becomes the soup. With all the goodness of the chicken and aromatics, what you’ll taste is soup with an amazing, full-bodied depth of flavour.

Their Golden Poached Rice with Seafood in Prawn Broth a.k.a Pao Fan ($19.44), is a dish that packs a punch in both flavour and texture. With ingredients procured freshly from mountains in the YunNan province, this sweet seafood broth is combined with crispy rice pops to provide an interesting interplay between textures.

Another one for the books is YunNan’s Crispy Hor Fun with Truffle Prawn ($19.44). Consisting of fried crispy hor fun, topped with piping hot prawn broth and truffle shavings, this meal brings crunchiness and springiness with each bite. Complete your meal with YunNans’ Grilled Sea Bass with Lemongrass (from $27.49) which goes perfectly with their housemade chili.
